THE
ISTRIAN TERTUFO - A GASTRONOMIC DELICACY
All gourmets agree: be it white or
black, tartufi are always a gastronomic delicacy. Therefore, as is
the case with all gastronomic delicacies, tartufi are very difficult
to find.

Since they are subterranean, tartufi
can not be found by people, but thanks to their intense aroma, they
can be found by specially trained truffle dogs or, in some cases, by
pigs. No, it is not a mistake. Pigs possess an extraordinary
sense of smell and make no mistakes when looking for these
subterranean delicacies.
Once you taste them you will be hooked!
Even though gourmets disagree whether it is a spice or food, they
are unanimous about the tartufo being the best of all delicacies.

ISTRIA - HOME OF THE TARTUFO
The trtufo develops from a bulb,
meaning it is subterranean. It is plain looking, similar to a
potato, and can be black or white. While the black tartufo is found
in red soil during summer months, the Istrian white tartufo is found
in moist, grey soil in early spring and is indisputably one of the
most valued white tartufi in the world. Hidden in the dense clay of
the heart-shaped Istrian peninsula, the tartufo can be found almost
everywhere in the interior of Istria, although the best place to
look for it is the Motovun woods.

THE
ISTRIAN TARTUFO-THE BIGGEST TARTUFO IN THE WORLD
Tartufi find everything they need in
the area through which the river Mirna flows, including Livade (Municipality
of Oprtalj) and the Buzet area, on the slopes of the Motovun woods.
Therefore, Buzet has been proclaimed "the City of the Tartufo", a
well-deserved name because the world's biggest tartufo has been
found there.
The giant Istrian white tartufo, found near Buzet,
weighing 1310 grams, was entered in the Guinness Book of Records and
still holds this prestigious title.

AND FINALLY - ENJOY THE TARTUFI
Istrians
prepare tartufi in a simple and somewhat old-fashioned way. Here is
there tartufi menu: scrambled eggs with tartufi; noodles (fuži,
njoki, pljukanci - types of local pasta) with truffles; zarebnjak (pork)
or some other meat with grated tartufi. So, come to Istria for
"Tartufo Days" and find out for yourself why the "Tartufi Days" are
a unique event.
